FOR GRILLED DISHES
This idea came from the many styles of pipians, or mixtures of seeds and chiles, popular in Mexico. If the pepitas, or pumpkin seeds, that you find are already salted, skip the extra salt at the end. Serve beside grilled chicken parts or duck breasts or spoon over grilled-chicken nachos.
Pepita Peno Salsa is a flavorful and versatile condiment that adds a delightful kick to various dishes, particularly when paired with poultry. This vibrant salsa combines the earthy richness of pumpkin seeds (pepitas), the mild heat of pickled jalapeños, and the aromatic touch of garlic. The result is a harmonious blend of textures and flavors that can elevate your meals with its unique profile.
To create this salsa, the process begins by combining unsalted pepitas, pickled jalapeños (seeded for a milder heat), pickling liquid from the jar, and garlic cloves in a food processor. A few quick pulses transform these ingredients into a coarse puree, showcasing the distinct textures of the pepitas while incorporating the spicy and tangy notes of the jalapeños.
Next, the addition of olive oil provides a smooth and luscious consistency to the salsa. The olive oil not only enhances the texture but also helps to balance and meld the flavors together. As a final touch, kosher salt or coarse sea salt is introduced to bring out the flavors and provide a savory contrast to the other elements.
Pepita Peno Salsa is incredibly versatile in its usage. It can be spooned directly onto cooked poultry to infuse it with a burst of flavor, or served alongside as a dipping sauce or condiment. The salsa’s nutty undertones from the pepitas, combined with the heat of jalapeños and the richness of olive oil, create a well-rounded taste profile that complements the savory notes of poultry dishes.
Stored properly in a covered container and refrigerated, this salsa can maintain its freshness and flavors for up to three weeks. The addition of a thin film of olive oil on top acts as a protective seal, preserving the salsa’s quality.
Whether you’re grilling, roasting, or sautéing poultry, Pepita Peno Salsa offers an inventive way to enhance your culinary creations with a touch of heat and complexity. Its versatility and homemade charm make it a valuable addition to your repertoire of condiments.

VARIATIONS:
- Creamy Pepita Peno Dip: To transform the salsa into a creamy dip, add a dollop of sour cream, Greek yogurt, or mayonnaise to the mixture. Blend until smooth for a rich and creamy texture that pairs well with tortilla chips or vegetable sticks.
- Citrus Twist: Incorporate the zest and juice of a lime or lemon to add a bright citrusy dimension to the salsa. This variation complements the earthy pepitas and adds a refreshing zing.
- Roasted Red Pepper Pepita Salsa: Roast red bell peppers until charred, then peel and seed them before adding to the basic pepita peno salsa recipe. This variation brings a subtle smokiness and sweetness to the salsa.
- Herb-Infused: Introduce fresh herbs like cilantro, parsley, or basil to the mix for a burst of herbaceous flavor. These herbs can add a fresh and vibrant element to the salsa.
- Sweet Heat: Balance the heat of the jalapeños with a touch of sweetness. Add a teaspoon of honey, agave nectar, or brown sugar to round out the flavors and provide a sweet contrast.
- Nutty Variation: Experiment with different types of nuts, such as almonds or cashews, in place of or in addition to the pepitas. This can add a different level of nuttiness and texture to the salsa.
- Smoky Kick: Enhance the smoky flavor by adding a pinch of smoked paprika or chipotle powder. This variation deepens the overall profile of the salsa.
- Fruit Fusion: For a surprising twist, incorporate diced fruits like mango, pineapple, or peach to introduce a fruity sweetness that complements the jalapeño heat.
- Spicy Mango Pepita Salsa: Combine the pepitas and jalapeños with ripe diced mangoes for a sweet and spicy salsa that’s perfect for pairing with grilled poultry or fish.
- Mediterranean Pepita Dip: Add a Mediterranean flair by including ingredients like sun-dried tomatoes, kalamata olives, and crumbled feta cheese. This version can be served with pita chips or as a spread.
