  • 6oz (175g) diced game meat, thawed if frozen, cut into small pieces
  • 1 red onion, chopped
  • 2 tbsp all-purpose flour
  • 1 quart (1 liter) beef stock
  • 1 tbsp red currant jelly
  • 3 button mushrooms, halved and sliced
  • 1 tbsp chopped fresh sage
  • 4 tbsp ruby port
  • Salt and freshly ground black pepper
  • 1 sheet ready-rolled puff pastry, thawed if frozen
  • 1 egg, beaten

 

INSTRUCTIONS:

  1. Sauté Game and Onion: In a saucepan, melt the butter and sauté the diced game meat and chopped onion for about 5 minutes, stirring occasionally, until they are browned.
  2. Incorporate Flour and Stock: Stir in the all-purpose flour and cook for an additional 1 minute. Remove the saucepan from the heat and gradually add the beef stock, incorporating the red currant jelly as well. Return the saucepan to the heat, bring the mixture to a boil while stirring, and add the sliced mushrooms, chopped fresh sage, ruby port, and a generous amount of seasoning. Bring it back to a boil, then reduce the heat, cover, and simmer gently for about 1 hour. Stir occasionally until the soup becomes rich and the meat is tender. Taste and adjust the seasoning if needed.
  3. Preheat the Oven: Meanwhile, preheat your oven to 425°F (220°C).
  4. Prepare Pastry Toppers: Cut four circles from the puff pastry sheet, each slightly larger than the rim of your oven-proof soup cups. Brush the pastry circles with the beaten egg.
  5. Assemble and Bake: Place your oven-proof soup cups on a baking sheet. Brush the edges of the cups with the beaten egg. Ladle the game soup into each cup. Top the soup with the puff pastry circles, pressing them down lightly around the edges to secure. Make a small slit in the top of each pastry lid using a sharp knife to allow steam to escape.
