INGREDIENTS

For the Pie Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 3-4 tablespoons ice water

 

For the Orange Filling:

  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups freshly squeezed orange juice (from about 4-5 oranges)
  • 3 large eggs, beaten
  • 2 tablespoons unsalted butter
  • Zest of 1 orange

 

For Topping (optional):

  • Whipped cream or vanilla ice cream
  • Slices of orange for garnish

 

INSTRUCTIONS

For the Pie Crust:

  1. In a mixing bowl, combine the all-purpose flour and salt.
  2. Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Be careful not to overmix.
  4. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  5. Preheat your oven to 375°F (190°C).
  6. Roll out the chilled pie dough on a lightly floured surface to fit a 9-inch pie pan. Trim any excess dough from the edges and crimp the edges decoratively.

 

For the Orange Filling:

  1. In a saucepan, whisk together the granulated sugar, all-purpose flour, cornstarch, and salt.
  2. Gradually whisk in the freshly squeezed orange juice until the mixture is smooth.
  3. Cook the mixture over medium heat, stirring constantly, until it thickens and comes to a boil. This should take about 5-7 minutes.
  4. Remove the saucepan from heat. Gradually whisk the beaten eggs into the orange mixture.
  5. Return the saucepan to low heat and continue cooking and stirring for another 2-3 minutes, or until the mixture thickens further.
  6. Remove the mixture from heat, and stir in the unsalted butter and orange zest until the butter is melted and the mixture is well combined.

 

Assembling the Orange Pie:

  1. Pour the orange filling into the prepared pie crust.
  2. Bake in the preheated oven for 25-30 minutes, or until the filling is set, and the top is golden brown.
  3. Remove the pie from the oven and let it cool to room temperature.
  4. Once cooled, you can refrigerate the pie until serving.

 

For Serving:

  1. Serve slices of the orange pie chilled or at room temperature.
  2. If desired, top each slice with a dollop of whipped cream or a scoop of vanilla ice cream and garnish with slices of fresh orange.
