INGREDIENTS

  • 1/4 cup fresh parsley, chopped
  • 2 Anaheim chili peppers, chopped

 

INSTRUCTIONS

  1. In a large skillet or saucepan, heat the olive oil over medium heat.
  2. Add the chopped onions, green bell pepper, and red bell pepper to the skillet. Sauté the vegetables for a few minutes until they begin to soften.
  3. Pour in the chicken broth and continue sautéing until most of the broth has evaporated, and the vegetables have softened further.
  4. Incorporate the minced habanero chiles into the mixture. If desired, you can roast the habaneros first for a smoky flavor.
  5. Add the diced tomatoes (both fresh and canned), lime juice, lemon juice, dried coriander leaf, oregano, sugar or honey (if using), and season with salt and pepper to taste.

  7. In the final minutes of cooking, stir in the fresh chopped parsley and Anaheim chili peppers, and continue to simmer for a few more minutes.
