  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 1 celery stalk, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 cup mushrooms, finely chopped
  • 1 tablespoon olive oil
  • 2 tablespoons soy sauce or tamari (for a gluten-free option)
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Vegetable oil or cooking spray for greasing the loaf pan

 

For the Gravy (Optional):

  • 1 cup vegetable broth
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons flour (you can use a gluten-free flour blend)
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

 

INSTRUCTIONS

  1. Prepare the Nut Roast:
    • Preheat your oven to 350°F (175°C). Grease a loaf pan and set it aside.
  2. Sauté Vegetables:
    • Heat the olive oil in a large skillet over medium heat. Add the chopped onion, garlic, carrot, celery, and red bell pepper. Sauté for about 5 minutes until the vegetables soften.
  3. Add Mushrooms and Nuts:
    • Add the chopped mushrooms to the skillet and cook for another 5 minutes until they release their moisture and become tender.
    • Stir in the finely chopped or ground mixed nuts and cook for an additional 3-4 minutes, allowing them to toast slightly.
  4. Season and Combine:
    • Add the soy sauce, dried thyme, dried rosemary, salt, and pepper to the skillet. Stir well to combine all the ingredients evenly.
  5. Mix in Breadcrumbs:
    • Remove the skillet from the heat and add the breadcrumbs. Mix until the breadcrumbs are thoroughly incorporated into the nut and vegetable mixture.
  6. Shape the Nut Roast:
    • Transfer the mixture to the greased loaf pan and press it down firmly to compact it.
  7. Bake:

  8. Prepare Gravy (Optional):
    • In a small saucepan, whisk together the vegetable broth, soy sauce, flour, dried thyme, salt, and pepper.
    • Cook the gravy over medium heat, stirring constantly until it thickens and becomes smooth. Remove from heat.
  9. Serve:
    • Allow the Nut Roast to cool for a few minutes before slicing.
