INGREDIENTS

  • 4 boneless, skinless chicken breasts or 8 bone-in chicken pieces (thighs, drumsticks, wings, etc.)
  • 1/4 cup olive oil
  • 2-3 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and black pepper to taste

 

INSTRUCTIONS

  1. Prepare the Marinade:
    • In a bowl, combine the olive oil, minced garlic, lemon juice, dried oregano, dried thyme, paprika, salt, and black pepper. Whisk the ingredients together until the marinade is well mixed.
  2. Marinate the Chicken:
    • Place the chicken pieces in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring that all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, but preferably 2-4 hours to allow the flavors to infuse into the chicken.
  3. Preheat the Grill:
    • Preheat your grill to medium-high heat, around 375-400°F (190-200°C). If you’re using a charcoal grill, wait until the coals are ash-covered and spread them out evenly.
  4. Oil the Grill Grates:
    • Before placing the chicken on the grill, oil the grill grates to prevent sticking. You can use tongs to hold a folded paper towel dipped in oil and rub it over the grates.
  5. Grill the Chicken:
    • Remove the chicken from the marinade and shake off any excess. Place the chicken on the grill and cook, turning occasionally, until the internal temperature reaches 165°F (74°C) for boneless, skinless breasts or 175°F (80°C) for bone-in pieces. This typically takes about 6-8 minutes per side for boneless breasts and 12-15 minutes per side for bone-in pieces, but cooking times may vary depending on the thickness of the chicken.
  6. Rest and Serve:
    • Once the chicken is cooked through, remove it from the grill and let it rest for a few minutes before serving. This allows the juices to redistribute, ensuring a juicy and flavorful result.
  7. Serve:
    • Grilled chicken can be served as a main course with your choice of side dishes or used in various recipes, such as salads, sandwiches, or pasta dishes.
