Not-Very-Authentic Peanut Sauce

This is inauthentic because I used substitutes for such traditional ingredients as lemon grass and fish sauce. I wanted a recipe that tasted good but could be made without a trip to specialty grocery store.

YIELD: About 2 cups or 16 servings

INGREDIENTS:

  • 1 piece of fresh ginger about the size of a walnut, peeled and thinly sliced across the grain
  • 1/2 cup natural peanut butter, creamy
  • 1/2 cup chicken broth
  • 1 1/2 teaspoons lemon juice
  • 1 1/2 teaspoons soy sauce
  • 1/4 teaspoon Tabasco sauce
  • 1 large or 2 small cloves garlic, crushed
  • 1 1/2 teaspoons Splenda

 

INSTRUCTIONS:

  1. Put all the ingredients in a blender, and run it until everything is well combined and smooth.
  2. If you’d like it a little thinner, add another tablespoon of chicken broth.

 

PER SERVING:

  •  2 grams of carbohydrates, a trace of fiber, and 2 grams of protein.
