INGREDIENTS:

  • 1 lb 2 oz (500g) mixed fish fillets and shellfish
  • Salt and freshly ground black pepper
  • 1 tbsp lemon juice
  • 2 ½ cups (600ml) fish or chicken stock
  • ¼ cup (60ml) white wine
  • 2 shallots, chopped
  • 1 egg yolk
  • 1 tbsp heavy cream
  • 1 tomato, peeled, seeded, and chopped
  • 1 tbsp chopped parsley
  • Croutons, to serve

 

INSTRUCTIONS:

  1. Begin by preparing the seafood. If needed, remove the skin from the fish fillets and shellfish, then cut them into 1-inch (2.5cm) pieces. Season the seafood with a sprinkle of salt, freshly ground black pepper, and the lemon juice.
  2. In a large saucepan, bring the fish or chicken stock, white wine, and chopped shallots to a boil.
  3. Add the seafood to the simmering liquid in the order of their cooking times. Start with the fish that takes longer to cook, such as red mullet or bass. After 2 minutes, add the turbot if using, followed by any haddock, cod, or salmon. Finally, add the shrimp or scallops. Simmer the mixture uncovered until all the seafood is just cooked and tender.
  4. In a bowl, stir together the egg yolk and heavy cream to create a smooth mixture.
  5. Remove the soup from the heat and gradually stir in the egg yolk and cream mixture. Gently fold in the peeled, seeded, and chopped tomato, followed by the chopped parsley.
