YIELD: This is about 1/2 cup, or 4 servings

INGREDIENTS:

  • 1/2 cup butter
  • 4 eggs yolks at room temperature
  • 1 tablespoon fresh lemon juice
  • White pepper

 

INSTRUCTIONS:

  1.  Heat the butter to a bubble in a saucepan over low heat; don’t let it burn.
  2.  While the butter is heating, put the egg yolks, lemon juice, and pepper to taste in a blender.
  3.  When the butter is bubbling, start the blender. Without giving the butter time to cool, slowly pour it into the blender. Whir for several seconds, and it’s done.

 

PER SERVING:

  • 1 gram of carbohydrates, a trace of fiber, and 3 grams of protein.
