MAKES: ABOUT 2 CUPS
INGREDIENTS:
- 8 ounces ripe red tomatoes, seeded, squeezed of watery liquid, and very finely diced
- 1 small red bell pepper, seeded and very finely diced
- 1 small yellow bell pepper, seeded and very finely diced
- ½ medium red or white onion, minced
- ¼ cup red wine vinegar
- 1 teaspoon kosher salt or coarse sea salt
- ½ cup extra-virgin olive oil
- ½ teaspoon crushed hot red chile flakes (optional)
INSTRUCTIONS:
- Prepare the Ingredients:
- Start by seeding the ripe red tomatoes and squeezing out any excess watery liquid.
- Very finely dice the seeded tomatoes and place them in a mixing bowl.
- Similarly, finely dice the small red and yellow bell peppers after seeding them.
- Mince the red or white onion finely and add it to the bowl.
- Mix the Salsa:
- In the same bowl, add the red wine vinegar, kosher salt or coarse sea salt, and extra-virgin olive oil.
- If desired, add the optional crushed hot red chile flakes to introduce a hint of heat.
- Gently mix all the ingredients in the bowl, ensuring even distribution of flavors.
- Refrigerate and Rest:
- Once all the ingredients are well combined, cover the bowl with a lid or plastic wrap.
- Place the bowl in the refrigerator for a minimum of 1 hour, allowing the flavors to meld and intensify. For the best results, refrigerate the salsa for several hours or up to a week.
