Based on a popular adult drink, this ice cream has satisfying “night out”
flavor when you opt to stay in.
INGREDIENTS:
YIELD: 1 QUART
- 1 cup Irish cream liqueur
- 1 cup coffee-flavored liqueur
- 3 cups heavy cream
- 1 cup half and half
- ¾ cup sugar
- 6 large egg yolks
- 7 ounces dark chocolate, finely chopped
- 1 tablespoon vanilla extract
- ⅓ cup mini chocolate chips

The Mudslide’s delicious origin can be traced back to the Caribbean
in the 1950s where it was allegedly invented at the Wreck Bar &
Grill in the Cayman Islands.
INSTRUCTIONS:
- Bring Irish cream and coffee-flavored liqueurs to a boil in a medium saucepan, and allow to reduce by half.
- Add cream, half and half, and sugar to a steaming simmer. Remove from heat.
- Whisk eggs in a large bowl. Slowly stream hot milk mixture into eggs until fully incorporated. Return mixture to heat, and cook over medium heat until thick, being careful not to boil.
- Strain into a clean bowl. Add the chopped chocolate and vanilla; stir until smooth. Refrigerate 4 hours to overnight.
- Add to ice cream maker and follow manufacturer’s instructions for freezing. Fold in the mini chocolate chips
