Based on a popular adult drink, this ice cream has satisfying “night out”
flavor when you opt to stay in.

INGREDIENTS:

YIELD: 1 QUART

  • 1 cup Irish cream liqueur
  • 1 cup coffee-flavored liqueur
  • 3 cups heavy cream
  • 1 cup half and half
  • ¾ cup sugar
  • 6 large egg yolks
  • 7 ounces dark chocolate, finely chopped
  • 1 tablespoon vanilla extract
  • ⅓ cup mini chocolate chips

The Mudslide’s delicious origin can be traced back to the Caribbean
in the 1950s where it was allegedly invented at the Wreck Bar &
Grill in the Cayman Islands.

INSTRUCTIONS:

  • Bring Irish cream and coffee-flavored liqueurs to a boil in a medium saucepan, and allow to reduce by half.
  • Add cream, half and half, and sugar to a steaming simmer. Remove from heat.
  • Whisk eggs in a large bowl. Slowly stream hot milk mixture into eggs until fully incorporated. Return mixture to heat, and cook over medium heat until thick, being careful not to boil.
  • Strain into a clean bowl. Add the chopped chocolate and vanilla; stir until smooth. Refrigerate 4 hours to overnight.
  • Add to ice cream maker and follow manufacturer’s instructions for freezing. Fold in the mini chocolate chips
