INGREDIENTS:

  • 3 cloves garlic, minced
  • 1 (15-ounce) can fire-roasted diced tomatoes
  • 1 (28-ounce) can crushed tomatoes
  • 2 stalks celery, diced
  • 1 medium onion, diced
  • 3 medium carrots, diced
  • 3 cups Vegetable Broth (see recipe in this chapter)
  • 2 (15-ounce) cans kidney beans, drained and rinsed
  • 2 tablespoons tomato paste
  • 2 tablespoons minced basil
  • 2 tablespoons minced oregano
  • 2 tablespoons minced Italian parsley
  • 1 ½ cups shredded cabbage
  • ½ cup diced zucchini
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 8 ounces small cooked pasta

INSTRUCTIONS:

  1. Build the Flavor Base: In a 4-quart slow cooker, combine the minced garlic, diced and crushed tomatoes, diced celery, diced onion, diced carrots, vegetable broth, drained and rinsed kidney beans, tomato paste, minced basil, minced oregano, and minced Italian parsley. This forms the foundation of your delicious Minestrone Soup.
  2. Cover the slow cooker and set it to cook on low heat for 6–8 hours. This allows the flavors to meld and develop into a rich and aromatic soup.
  3. Add Freshness: In the final hour of cooking, stir in the shredded cabbage and diced zucchini. These fresh vegetables will add a burst of vibrant flavor and texture to your soup.
  4. Season and Serve: Just before serving, season your Minestrone Soup with salt and pepper to taste. Ensure the flavors are perfectly balanced.
  5. To complete your soup, stir in the small cooked pasta. This adds a comforting and hearty element to your Minestrone.

Pasta Shapes for Soup:

  • When choosing pasta shapes for your Minestrone or other soups, consider using small varieties like Anchellini, small shells, hoops, alfabeto, or ditalini. For heartier soups, bow-ties or rotini work well. If you’re preparing Asian-style soups, opt for thin rice noodles or vermicelli for a more authentic experience.
