Zinc Cafe and Market here in San Diego serves oatmeal that gets people lining up around the block every morning. Zinc serves the oatmeal three different ways: One version is topped with steamed milk, homemade fruit-filled granola, and toasted nuts. The fresh “load” is topped with steamed milk, brown sugar,and fresh berries of the season. And the super load is a combination of the first two, for oatmeal nirvana. After eating this version of the super load, you may be good to go until dinnertime!
SERVES: 4
INGREDIENTS:
- 1 cup steel-cut oats, such as McCann’s
- 3 1/2 cups water
- 1 teaspoon salt
- 2 tablespoons unsalted butter, melted
- 1 cup steamed milk
- 1/2 cup light brown sugar or raw sugar
- 1 cup fruited granola (see note)
- 1 cup mixed fresh berries, such as blueberries and red raspberries
- 1/2 cup toasted pecans, walnuts, or sliced almonds (see note)
INSTRUCTIONS:
- In the pressure cooker, combine the oats, water, and salt. Drizzle the melted butter over the water.
- Lock the lid in place and cook at high pressure for 5 minutes.
- Quick release the pressure and remove the lid, tilting the pot away from you to avoid the escaping steam.
- Stir the oatmeal and divide among four bowls.
- Top each serving with a quarter of the steamed milk, brown sugar, granola, fresh berries, and toasted nuts.
NOTE:
- Bear Naked Brand makes good fruited granola, and so does Trader Joe’s.
