  • 7 slices Bacon
  • 1 tablespoon Olive Oil
  • 4 large Bella Mushroom Caps

  • 1/2 cup Chopped Fresh Basil
  • 4 oz. Fresh Mozzarella Cheese, Cubed
  • 2 oz. Goat Cheese, Grated
  • 1 medium Red Bell Pepper
  • 8-9 large Eggs
  • 1/4 cup Heavy Cream
  • 1/4 cup Parmesan Cheese, Grated
  • Salt and Pepper to taste

 

INSTRUCTIONS:

  1. Preheat the oven to 350F (175C).
  2. Prep all the vegetables by chopping the basil, red pepper, mushrooms, and bacon.
  3. Slice the fresh mozzarella into cubes and set it aside.
  4. In a hot pan, add olive oil.
  5. Once the oil is hot, add the bacon and cook it until it becomes browned. Then add the red pepper and let it cook in the bacon fat until it becomes soft.
  6. While the red peppers are cooking, in a separate container, whisk together 9 eggs, 1/4 cup heavy cream, 1/4 cup parmesan cheese, and fresh ground black pepper.
  7. Add the mushrooms to the pan once the red pepper is soft and stir everything together well.

  13. Remove the frittata from the oven and use a spoon to carefully pry the edges away from the pan.
  14. Once done, flip the frittata out of the pan onto a cutting board.
  15. Slice the frittata into portions and serve.
