INGREDIENTS:

Filling:

  • 7 cups sliced peeled tart apples
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • ¾ cup chopped pecans
  • ⅓ cup packed brown sugar
  • 3 tablespoons sugar
  • 4½ teaspoons ground cinnamon
  • 1 tablespoon cornstarch
  • ¼ cup caramel ice cream topping, room temperature
  • 1 unbaked pastry shell (9 inches)
  • 3 tablespoons butter, melted

Streusel Topping:

  • ¾ cup all-purpose flour
  • ⅔ cup chopped pecans
  • ¼ cup sugar
  • 6 tablespoons cold butter
  • ¼ cup caramel ice cream topping, room temperature

PREPARATIONS:

  1. In a large bowl, toss the sliced apples with lemon juice and vanilla. Combine the chopped pecans, brown sugar, sugar, cinnamon, and cornstarch; add to the apple mixture, tossing to coat. Pour caramel topping over the bottom of the pastry shell and top it with the apple mixture (the shell will be full). Drizzle melted butter over the filling.
  2. In a small bowl, combine flour, chopped pecans, and sugar for the streusel topping. Cut in cold butter until the mixture resembles coarse crumbs. Sprinkle this streusel over the filling.
  3. Bake the pie at 350°F for 55-65 minutes or until the filling is bubbly and the topping is beautifully browned. Once done, immediately drizzle more caramel topping over the pie and let it cool on a wire rack.

TIPS:

  • Opt for tart apples like Granny Smith or Honeycrisp for the perfect balance of sweetness and tanginess in the pie.
  • To prevent the edges of the crust from overbrowning during baking, consider covering them with aluminum foil.
  • Serve this scrumptious pie warm, and for an added touch of indulgence, consider pairing it with a scoop of vanilla ice cream or a dollop of freshly whipped cream.
