INGREDIENTS:

  • 2 packages (¼ ounce each) active dry yeast
  • 1 teaspoon plus ½ cup sugar, divided
  • ½ cup warm water (110° to 115°)
  • ¾ cup warm milk (110° to 115°)
  • ½ cup butter, softened
  • 1 egg
  • 1 teaspoon salt
  • ½ teaspoon ground cardamom
  • 5 to 5½ cups all-purpose flour
  • 1½ cups chopped mixed candied fruit
  • ½ cup golden raisins

PREPARATIONS:

  1. In a bowl, dissolve the yeast and 1 teaspoon of sugar in water; let it stand for 5 minutes. Add milk, softened butter, egg, salt, cardamom, 2¼ cups of flour, and the remaining sugar. Beat the mixture until smooth. Stir in the candied fruit, raisins, and enough remaining flour to form a soft dough.
  2. Turn the dough onto a floured surface and knead it until smooth and elastic, approximately 6-8 minutes. Place the dough in a greased bowl, turning it once to grease the top. Cover and let it rise in a warm place until doubled, about 1½ hours.
  3. After the dough has risen, punch it down and shape it into two loaves. Place the loaves in two greased 8×4-inch loaf pans. Cover and let them rise until doubled, about 45 minutes. Bake the loaves at 350°F for 35-40 minutes or until they turn golden brown. Remove the loaves from the pans and cool them on wire racks.
