INSTRUCTIONS:

  1. Start by trimming the chicken of any excess fat and cutting it into 8 pieces or any combination of parts you prefer. Sprinkle the chicken with salt and freshly ground black pepper, seasoning it to your taste. Brush the chicken pieces with a light coating of extra virgin olive oil, enhancing the flavor and ensuring a succulent texture.
  2. Heat a charcoal or gas grill or the broiler to moderate heat, positioning the rack about 6 inches from the heat source. If grilling, create an area of the grill with lower heat for indirect cooking.
  3. For grilling, begin by placing the chicken pieces skin side up on the cooler side of the grill. As some of the fat renders, turn the chicken to avoid flare-ups. If necessary, move the chicken to a cooler part of the grill or revert to skin side up. Once the skin has lost its raw appearance and most of the fat has rendered (approximately 20 minutes), move the chicken directly over the fire. Continue cooking, turning occasionally, until both sides achieve a lovely brown color, and the flesh is firm and fully cooked, usually taking an additional 5 to 10 minutes.
  4. If using the broiler, start with the chicken skin side down, ensuring it does not burn. Broil until it is nearly done, which typically takes about 15 minutes. Then, turn the chicken and cook until the skin is golden brown (to check for doneness, cut into a piece close to the bone; the juices should run clear), requiring approximately 5 to 10 minutes longer.
