Herbed Green Bean and Potato Salad

My father used to love to go fishing in the waters off Sheepshead Bay in Brooklyn, where we lived. At home he would grill his catch while my mother prepared this salad, which is traditional in Southern Italy.

SERVES: 6

INGREDIENTS:

  • 1¼ pounds waxy potatoes, such as Yukon Golds, scrubbed
  • Salt
  • 8 ounces green beans, trimmed
  • ½ cup chopped red onion
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • Freshly ground pepper
  • ¼ cup chopped fresh basil
  • ¼ cup chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon chopped fresh thyme

 

INSTRUCTIONS:

  1. Place the potatoes in a saucepan with enough cold water to cover them. Add salt to the water.
  2. Bring the water to a simmer and cook the potatoes until they are tender, about 20 minutes.
  3. Drain the potatoes and let them cool.
  4. In a separate medium saucepan, bring salted water to a boil. Add the green beans and cook them for 8 to 10 minutes, or until they are tender.
  5. Drain the green beans in a colander and cool them under cold running water. Pat them dry and cut them into 1-inch pieces.
  6. Peel the cooled potatoes and cut them into bite-size cubes. Transfer the potatoes to a serving bowl and add the green beans and chopped red onion.
  7. In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, salt, and freshly ground pepper to taste.
  8. Whisk in the chopped fresh basil, chopped fresh parsley, chopped fresh dill, and chopped fresh thyme to the dressing.
  9. Pour the dressing over the vegetables in the serving bowl. Toss well to coat the vegetables with the dressing.
  10. Serve and enjoy!
