INGREDIENTS:
- 1 tbsp olive oil
- 3 cloves garlic, minced
- ¼ cup chopped drained oil-packed sun-dried tomatoes
- ¼ cup chopped roasted red pepper
- ¼ tsp hot pepper flakes
- 1 cup whipping cream (35%)
- 2 tbsp sliced fresh basil
DIRECTIONS:
- In a saucepan, heat the olive oil over medium heat.
- Add the minced garlic and cook until light golden for about 1 minute.
- Add the sun-dried tomatoes, roasted red pepper, and hot pepper flakes. Cook, stirring occasionally, until fragrant for about 2 minutes.
- Stir in the whipping cream and simmer until thick enough to coat the back of the spoon for about 5 minutes.
- Stir in the sliced fresh basil.
