SUN-DRIED TOMATO AND ROASTED RED PEPPER CREAM SAUCE

MAKES about 1 cup

INGREDIENTS:

  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • ¼ cup chopped drained oil-packed sun-dried tomatoes
  • ¼ cup chopped roasted red pepper
  • ¼ tsp hot pepper flakes
  • 1 cup whipping cream (35%)
  • 2 tbsp sliced fresh basil

DIRECTIONS:

  1. In a saucepan, heat the olive oil over medium heat.
  2. Add the minced garlic and cook until light golden for about 1 minute.
  3. Add the sun-dried tomatoes, roasted red pepper, and hot pepper flakes. Cook, stirring occasionally, until fragrant for about 2 minutes.
  4. Stir in the whipping cream and simmer until thick enough to coat the back of the spoon for about 5 minutes.
  5. Stir in the sliced fresh basil.
