Most people don’t think of SPAM as a kebab item, but believe it or not, the sweet, sour, and salty aspects of this dish really works. This recipe is quite simple and requires little time on the grill. It’s a perfect small-bite item or fast enough for a meal when you’re in a pinch.
MAKES: 6 TO 10 KEBABS
INGREDIENTS:
- 1 can of SPAM
- 1 pineapple
- 1 to 2 green bell peppers
- 6 to 10 skewers
- 1 cup (235 ml) pineapple juice
INSTRUCTIONS:
- Preheat the grill for medium-high heat. When the grill is ready, oil the grill grates right before putting on the kebabs. Using long-handled tongs, dip some folded paper towels in a high smoke point cooking oil and wipe down the grill grates, making at least three good passes to create a nonstick surface.
- Cut the SPAM into 1-inch (2.5 cm) cubes. Core and cut the bell peppers into 1-inch (2.5 cm) pieces. Peel, core, and cut the pineapple into 1-inch (2.5 cm) pieces. Thread the SPAM cubes onto the skewers, alternating with the bell pepper and pineapple pieces. Make sure to start and end with SPAM cubes.
- Place the kebabs onto the grill. Cook for a total of 6 minutes. Brush often with the pineapple juice and watch that the kebabs do not burn.
- Once cooked to the desired doneness, remove the kebabs from the grill and serve immediately.
NOTE:
- For a vegetarian or vegan option, use a flavored seitan or halloumi or kasseri cheese. Obviously, these ingredients will change the flavor profile of the recipe given the salty/slightly smoky flavor of SPAM.
