  • 1 pound fresh green beans, blanched in salted water and shocked
  • 1 cup diced tomatoes
  • Salt and freshly ground black pepper

 

INSTRUCTIONS:

  1. Prepare the Ingredients: Start by blanching the fresh green beans. Bring a large pot of salted water to a boil. Add the green beans and cook for about 3-4 minutes until they are bright green and tender but still crisp. Drain them and immediately transfer to a bowl of ice water (shocking) to stop the cooking process. Drain again and set aside.
  2. Sauté the Shallots and Pine Nuts: In a large skillet, heat the extra-virgin olive oil over medium heat. Add the finely chopped shallots or red onion and the pine nuts. Sauté until the pine nuts begin to brown lightly, which should take around 3-4 minutes. Keep an eye on them as they can burn quickly.
  3. Combine Green Beans and Tomatoes: Add the blanched green beans and the diced tomatoes to the skillet. Season with a pinch of salt and some freshly ground black pepper to taste.
  4. Sauté the Mixture: Cook the green beans and tomato mixture just until warmed through and the tomatoes have slightly softened. This should take only a few more minutes. Be careful not to overcook the green beans; they should maintain their vibrant color and crispness.
  5. Serve: Once everything is heated through and well combined, transfer the green beans and pine nut sauté to a serving dish. You can serve this dish hot as a side or at room temperature, depending on your preference.
