INGREDIENTS:
- 1 cup cream cheese, softened
- 1 cup butter, softened
- 2-3 tbsp freshly chopped herbs (basil, thyme, oregano, parsley) or 2 tsp dried herbs
- 4 pieces sun-dried tomatoes, drained
- 4 Kalamata olives, pitted and chopped
- 2 cloves garlic, crushed
- Freshly ground black pepper
- 1 tsp sea salt
- 5 tbsp Parmesan cheese, finely grated
INSTRUCTIONS:
- Mash the softened butter and cream cheese together with a fork until well combined.
- Mix in the chopped sun-dried tomatoes and chopped Kalamata olives.
- Add the freshly chopped herbs or dried herbs, crushed garlic, and season with salt and pepper. Mix well.
- Place the mixture in the fridge for 20-30 minutes to firm up.
- Remove the cheese mixture from the fridge and shape it into 5 balls using a spoon or an ice-cream scooper.
- Place the grated Parmesan cheese in a shallow dish. Roll each ball in the grated Parmesan cheese, ensuring they are evenly coated.
- Place the coated cheese balls on a plate.
- Serve immediately or store in an airtight container in the fridge for up to a week.
