Greek-Style Fat Bomb Balls

INGREDIENTS:

  • 1 cup cream cheese, softened
  • 1 cup butter, softened
  • 2-3 tbsp freshly chopped herbs (basil, thyme, oregano, parsley) or 2 tsp dried herbs
  • 4 pieces sun-dried tomatoes, drained
  • 4 Kalamata olives, pitted and chopped
  • 2 cloves garlic, crushed
  • Freshly ground black pepper
  • 1 tsp sea salt
  • 5 tbsp Parmesan cheese, finely grated

 

INSTRUCTIONS:

  1. Mash the softened butter and cream cheese together with a fork until well combined.
  2. Mix in the chopped sun-dried tomatoes and chopped Kalamata olives.
  3. Add the freshly chopped herbs or dried herbs, crushed garlic, and season with salt and pepper. Mix well.
  4. Place the mixture in the fridge for 20-30 minutes to firm up.
  5. Remove the cheese mixture from the fridge and shape it into 5 balls using a spoon or an ice-cream scooper.
  6. Place the grated Parmesan cheese in a shallow dish. Roll each ball in the grated Parmesan cheese, ensuring they are evenly coated.
  7. Place the coated cheese balls on a plate.
  8. Serve immediately or store in an airtight container in the fridge for up to a week.
