This classic cobbler recipe, discovered by my friend John Willoughby in a southern boardinghouse years ago, has stood the test of time and remains a favorite. With its fluffy, slightly flaky, and buttery cobbler dough, this recipe strikes the perfect balance between a biscuit and a cookie. While blueberries are the suggested fruit, feel free to use any fruit of your choice. The cobbler is best enjoyed with a generous dollop of Buttermilk or Vanilla Ice Cream or a swirl of Whipped Cream. It’s a comforting and delicious dessert that is sure to please both family and friends.

 

MAKES: 6 to 8 servings

INGREDIENTS:

  • 4 to 6 cups blueberries or other fruit, washed and well-dried, peeled and sliced as necessary
  • 1 cup sugar, or to taste
  • 8 tablespoons (1 stick) cold unsalted butter, cut into bits, plus extra for greasing the pan
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1 egg
  • 1/2 teaspoon vanilla extract

 

INSTRUCTIONS:

  1. Preheat the oven to 375°F (190°C). Toss the blueberries or your chosen fruit with half of the sugar and spread it evenly in a lightly greased 8-inch square or 9-inch round baking pan.
  2. In a food processor, combine the flour, baking powder, salt, and the remaining 1/2 cup of sugar. Pulse the mixture once or twice to incorporate the ingredients.
  3. Add the cold butter to the processor and pulse for about 10 seconds until the mixture is well blended. If you don’t have a food processor, you can do this step by hand. Beat in the egg and vanilla extract manually until combined.
  4. Drop tablespoonfuls of the cobbler dough onto the fruit, leaving space for steam to escape during baking. Avoid spreading the dough out; instead, keep it in mounds.
  5. Place the baking pan in the preheated oven and bake for approximately 35 to 45 minutes, or until the cobbler topping turns golden yellow and just starts to brown.
  6. Once baked, remove the cobbler from the oven. Serve it immediately while still warm, allowing the flavors of the fruit and buttery cobbler dough to shine through.

  • Use fresh, ripe fruit for the best flavor in your cobbler. If using berries, make sure they are well-dried to prevent excess moisture in the filling.
