Ginger Tangerine Finishing Sauce

FOR CONTEMPORARY SMOKED FOOD & GRILLED DISHES

Zingy and zesty, the heat of the ginger hits you right up front, and white pepper reinforces the blast on the back end without calling attention to itself. Sure, you can substitute orange juice for tangerine if you need to, but there’s an extra special freshness to tangerine or clementine juice when they are available in the winter months.

Ginger Tangerine Finishing Sauce is a delightful and versatile sauce that combines the zesty flavors of fresh tangerines or clementines with the warm and aromatic essence of minced ginger. This sauce is the perfect finishing touch to elevate a wide range of dishes, particularly pork, with its delectable sweet and tangy profile.

The sauce begins by sautéing minced ginger in vegetable or sunflower oil, allowing the ginger to soften and release its fragrant oils. The addition of orange marmalade creates a luscious and thick sauce, infusing the mixture with the sweet and citrusy notes of orange. A touch of finely ground white pepper adds a subtle hint of heat, beautifully balancing the sweetness and enlivening the taste.

The star ingredient, fresh tangerine or clementine juice, is stirred into the sauce, bringing a burst of bright and vibrant citrus flavors. The sauce can be briefly cooled and pureed to achieve a smooth consistency, ensuring a silky and luxurious texture that perfectly coats the meat.

As a finishing sauce, it is best to baste the pork with a portion of the Ginger Tangerine Finishing Sauce near the end of the cooking time. This allows the flavors to infuse and caramelize on the meat, creating a mouthwatering glaze that enhances the natural taste of the pork.

The remaining sauce can be served warm or at room temperature alongside the prepared dish, providing an additional burst of flavor with each bite. Its shelf life in the refrigerator allows for future use, making it a convenient and versatile sauce to have on hand.

The Ginger Tangerine Finishing Sauce is a delightful fusion of sweet, tangy, and spicy elements, making it an excellent complement to a variety of dishes beyond pork. With its exquisite blend of fresh and aromatic flavors, this sauce is sure to elevate any meal and leave a lasting impression on your taste buds.

MAKES: ABOUT 1½ CUPS

INGREDIENTS:

  • 1 tablespoon vegetable or sunflower oil
  • Walnut-size chunk of fresh ginger, minced
  • 1 cup orange marmalade
  • ½ teaspoon finely ground white pepper
  • ½ cup fresh tangerine or clementine juice, from 2 or 3 tangerines or 4 or 5 clementines

INSTRUCTIONS:

  1. Warm the vegetable or sunflower oil in a small saucepan over medium heat. Stir in the minced ginger and cook until it softens, which should take about 5 minutes. The ginger will release its aromatic flavors and infuse the oil with its distinctive taste.
  2. Stir in the orange marmalade and finely ground white pepper, cooking until the marmalade melts into a thick sauce. The combination of sweet orange marmalade and the subtle heat of white pepper creates a deliciously balanced and flavorful sauce.
  3. Remove the saucepan from the heat and stir in the freshly squeezed tangerine or clementine juice. The juice adds a refreshing citrus twist to the sauce, brightening the flavors and complementing the sweet and spicy elements.
  4. If the marmalade in the sauce is particularly chunky, allow the sauce to cool briefly before transferring it to a food processor or blender. Puree the sauce until it reaches your desired consistency, ensuring a smooth texture.
  5. Use a portion of the sauce to baste the pork near the end of the cooking time, allowing the flavors to infuse and caramelize on the meat. Serve the remaining sauce warm or at room temperature alongside the prepared dish. The sauce pairs exceptionally well with pork, enhancing its natural flavors and adding a delightful burst of sweetness and tang.
  6. Any leftover sauce can be stored in a covered container in the refrigerator for up to a week. When serving again, warm the sauce before use to retain its smooth texture and enticing flavors.
