INGREDIENTS:

  • 2 garlic heads, top quarter cut off to expose garlic cloves
  • 6 tablespoons plus 1 teaspoon extra-virgin olive oil
  • 8 portobello mushroom caps (3 to 4 inches in diameter), sliced ¾ inch thick
  • Salt and pepper
  • ¼ teaspoon sugar
  • 2 tablespoons lemon juice, plus extra as needed
  • ¼ teaspoon red pepper flakes
  • 1 pound fusilli
  • 1 ounce Pecorino Romano cheese, grated (½ cup), plus extra for serving
  • 1 tablespoon chopped fresh rosemary
  • ¼ cup pine nuts, toasted

 

INSTRUCTIONS:

  1. Adjust the oven rack to the middle position and place a large rimmed baking sheet on the rack. Preheat the oven to 500 degrees Fahrenheit (260 degrees Celsius).
  2. Place the garlic heads, cut side up, in the center of a 12-inch square of aluminum foil. Drizzle each garlic head with ½ teaspoon of olive oil and wrap them securely in the foil. Place the garlic packet on the oven rack and roast until the garlic is very tender, about 40 minutes.
  3. While the garlic is roasting, toss the portobello mushroom slices with 2 tablespoons of olive oil, 1 teaspoon of salt, ¼ teaspoon of pepper, and the sugar in a bowl. Remove the baking sheet from the oven and carefully lay the mushroom slices, gill side down, on the hot baking sheet in an even layer. Roast the mushrooms until they are well browned and tender, which should take around 20 to 25 minutes. Flip the mushrooms halfway through the cooking process.
  4. Transfer the roasted mushrooms to a cutting board and let them cool slightly. Then, cut the mushrooms into ½-inch pieces.
  5. Once the garlic is done roasting, transfer the garlic packet to a cutting board and let it cool for 10 minutes. Unwrap the garlic and gently squeeze to remove the cloves from their skin. Transfer the garlic cloves to a small bowl and mash them smooth with a fork. Stir in the lemon juice and red pepper flakes, and then slowly whisk in the remaining ¼ cup of olive oil to create a garlic sauce.
  6. Bring 4 quarts of water to a boil in a large pot. Add the fusilli and 1 tablespoon of salt, and cook the pasta, stirring often, until it is al dente. Before draining the pasta, reserve 1 cup of the cooking water.
  7. Return the drained pasta to the pot, and add the chopped mushrooms, garlic sauce, grated Pecorino Romano cheese, chopped rosemary, and ¼ cup of the reserved cooking water. Toss all the ingredients together to combine.
  8. Season the pasta with salt, pepper, and extra lemon juice to taste. If needed, add more of the reserved cooking water to adjust the consistency of the dish.
  9. Sprinkle the individual portions with toasted pine nuts and serve with extra Pecorino Romano cheese.
