INGREDIENTS:

  • 1 quart fresh Ontario strawberries
  • 1 cup white sugar
  • 1 lemon, juiced
  • Cold water

NOTES:

  • If you can’t use fresh Ontario strawberries, you can substitute with thawed frozen strawberries. Avoid using California strawberries from the grocery store, as they may lack the desired flavor for this recipe.

INSTRUCTIONS:

  1. Wash and hull the strawberries.
  2. In a bowl, mix the strawberries with the sugar and mash them using a wooden spoon or potato masher until they are pureed.
  3. Add 1 cup of water to the strawberry mixture and pour it through a fine sieve to remove any pulp. Discard the pulp left in the sieve.
  4. Transfer the strawberry mixture to a large jug.
  5. Add the juice of the lemon and 4 cups of cold water to the jug. Stir well.
  6. Taste the strawberry water and add more sugar if desired, according to your preference.
  7. Serve the strawberry water in glasses over ice, and for an extra touch, add a small strawberry to each glass.

TIPS:

Use sparkling water instead of still water in the third step of the recipe to make a natural soda.
