INGREDIENTS:

  • 1 heaped tbsp coriander seeds
  • 1 tsp cumin seeds
  • 1 dried red chile or 1⁄2 tsp crushed hot red pepper flakes
  • 1 rounded tsp ground turmeric
  • 1⁄4 tsp ground fenugreek
  • 1 medium onion, chopped
  • 1 large garlic clove, split in half
  • 11⁄2lb (675g) parsnips, cored and diced
  • 2 tbsp (30g) butter
  • 1 tbsp all-purpose flour
  • 1 quart (1 liter) vegetable stock, beef stock, or chicken stock
  • Salt and freshly ground black pepper
  • 2⁄3 cup (150ml) light cream
  • Chopped chives or parsley, to garnish

 

INSTRUCTIONS:

  1. Prepare the Spice Mixture: Process the first five ingredients in a coffee grinder, or use a mortar and pestle to pound the whole spices, then mix them with the ground spices. Transfer the spice mixture to a small jar; you won’t need all of it for this recipe.
  2. Sauté the Aromatics: In a large saucepan, melt the butter over medium heat. Add the chopped onion, split garlic clove, and diced parsnips. Cover the pan with a lid and cook for about 10 minutes, or until the vegetables have softened. Stir in the flour and 1–2 tbsp of the prepared spice mixture. Cook for an additional 2 minutes, stirring occasionally.
  3. Add Stock and Simmer: Gradually pour in the vegetable stock, beef stock, or chicken stock, stirring constantly. Bring the mixture to a boil, then reduce the heat and let it simmer gently for 10–15 minutes, or until the parsnips become tender.
  4. Blend and Season: Remove the split garlic clove, then carefully puree the soup until it’s smooth using a blender. Dilute the soup with water to reach your desired consistency. Season the soup to taste with salt and freshly ground black pepper. Reheat it if necessary.
  5. Add Cream and Serve: Stir in the light cream to add a luxurious touch to the soup. Ladle the Curried Parsnip Soup into bowls and garnish each serving with chopped chives or parsley.
