Cranberry cake with almond-butter sauce is a delectable dessert that combines the tartness of cranberries with the nutty richness of almond butter. This dessert is a delightful fusion of flavors and textures, making it a perfect addition to your holiday table or any special occasion. The history of cranberries in American cuisine dates back centuries, and this recipe showcases the versatility of this vibrant fruit. In this recipe, we’ll explore the long history of cranberries in American cooking and provide detailed instructions on how to make a cranberry cake topped with a luscious almond-butter sauce.

Cranberries are native to North America, and indigenous peoples have been using them for centuries. Native Americans used cranberries in a variety of dishes and as a natural preservative for meats.

When European settlers arrived in North America, they learned about cranberries from Native Americans and began incorporating them into their own cooking. Cranberry sauce, a classic Thanksgiving side dish, has its origins in these early interactions between settlers and indigenous peoples.

In the 19th century, cranberries became an important crop in the United States, and commercial cultivation began in earnest. Cranberry recipes started appearing in cookbooks, including cranberry pies, cakes, and other desserts.

Today, cranberries are a staple in American cooking, particularly during the holiday season. Their tartness and vibrant red color add a festive touch to a wide range of dishes, from sauces to desserts like this cranberry cake with almond-butter sauce.

INGREDIENTS

For the Cranberry Cake:

  • 2 cups fresh or frozen cranberries
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sour cream

For the Almond-Butter Sauce:

  • 1/2 cup unsalted butter
  • 1/2 cup almond butter
  • 1 cup powdered sugar
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • A pinch of salt

INSTRUCTIONS

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×9-inch (23×23 cm) square baking pan.
  2. Prepare the Cranberries: In a bowl, toss the cranberries with 1/2 cup of granulated sugar. Set them aside to macerate while you prepare the cake batter. This helps to soften the cranberries and reduce their tartness.
  3. Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy.
  4. Add Eggs and Vanilla: Add the eggs and vanilla extract to the butter-sugar mixture and beat until well combined.
  5. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  6. Add Dry Ingredients and Sour Cream: Gradually add the dry ingredient mixture to the wet ingredients, alternating with the sour cream, beginning and ending with the dry ingredients. Mix until the batter is smooth and well combined.
  7. Fold in Cranberries: Gently fold in the macerated cranberries and any accumulated juice into the cake batter.
  8. Bake: Pour the batter into the prepared baking pan and spread it out evenly. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  9. Prepare the Almond-Butter Sauce: While the cake is baking, prepare the almond-butter sauce. In a saucepan over medium heat, melt the unsalted butter and almond butter together, stirring until smooth.
  10. Add Remaining Sauce Ingredients: Stir in the powdered sugar, heavy cream, vanilla extract, and a pinch of salt. Continue to cook and stir until the sauce is heated through and well combined. Remove it from heat.
  11. Serve: Once the cranberry cake has cooled slightly, cut it into squares and drizzle each serving with the warm almond-butter sauce. Serve and enjoy this delightful dessert!

Cranberry cake with almond-butter sauce is a wonderful combination of sweet, tart, and nutty flavors. It’s a dessert that pays tribute to the rich history of cranberries in American cuisine while offering a delicious and comforting treat for any occasion.
