INGREDIENTS:

  • 4 cups ketchup
  • 1/2 cup apple cider vinegar
  • 1/2 cup vegetarian Worcestershire sauce
  • 1/2 cup light brown sugar, firmly packed
  • 1/2 cup molasses
  • 1/2 cup prepared mustard
  • 2 tablespoons barbecue seasoning
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon liquid smoke (optional)
  • 2 tablespoons hot sauce, or to taste (optional)
  • Salt, to taste (optional)

INSTRUCTIONS:

  1. Combine Ingredients: In your pressure cooker, add all the ingredients listed, except for the optional seasonings (liquid smoke, hot sauce, and salt). Stir the ingredients together to create a well-mixed base for your barbecue sauce.
  2. Pressure Cook: Lock the lid of your pressure cooker into place. Bring it to low pressure and maintain it for 20 minutes to allow the flavors to meld and intensify.
  3. Quick-Release Pressure: Once the pressure cooking time is complete, remove the pressure cooker from the heat source and use the quick-release method to release the pressure safely.
  4. Taste and Adjust: After opening the pressure cooker, taste your barbecue sauce for seasoning. This is your opportunity to customize it to your liking. Depending on your preference, you can add optional seasonings such as liquid smoke for a smoky flavor, hot sauce for some heat, or a pinch of salt for more savory depth.
  5. Store: Ladle the prepared barbecue sauce into sterilized glass jars. Seal the jars tightly, and you can store the sauce in the refrigerator for up to 3 months.

BARBECIUE SEASONING:

  • Barbecue seasoning is a flavorful blend of herbs and spices that can easily be found in the spice aisle of your local grocery store. If you prefer to make your own, combine equal parts brown sugar, ground red pepper, salt, garlic powder, onion powder, paprika, and dried oregano.
