MAKES: ABOUT 1 CUP
INGREDIENTS:
- 1 cup packed fresh cilantro leaves and tender stems
- 1 cup packed fresh mint leaves and tender stems
- 1 fresh serrano chile, seeded and chopped
- ¼ cup water
- 1 tablespoon fresh lime juice
- 2 teaspoons minced fresh ginger
- ½ teaspoon granulated sugar
- Kosher salt or coarse sea salt
INSTRUCTIONS:
- Combine all of the ingredients in a food processor.
- Puree the mixture until smooth.
- Serve the chutney right away with lamb.
- Refrigerate leftovers in a covered container for up to several days, but bring back to room temperature before serving again.
VARIATIONS:
- Coconut Twist: To add a tropical twist to the chutney, blend in some grated coconut along with the cilantro, mint, and other ingredients. This will introduce a subtle nutty flavor and a creamy texture to the chutney.
- Yogurt Enrichment: For a creamier and slightly tangy version, mix in a couple of tablespoons of plain yogurt while blending. This variation not only enhances the texture but also introduces a cooling element to balance the heat.
- Nutty Crunch: Add a handful of toasted nuts such as almonds or cashews to the chutney before blending. This will provide a delightful nutty crunch to the otherwise smooth consistency.
- Fruity Fusion: For a unique twist, incorporate a small amount of diced mango or pineapple into the chutney. The fruity sweetness will play off the herbal and spicy notes, creating a harmonious blend of flavors.
- Lemon Zest: Instead of lime juice, use freshly grated lemon zest to infuse a bright citrus aroma into the chutney. This can add a different dimension to the overall flavor profile.
- Cumin Infusion: Roast some cumin seeds and grind them into a powder. Mix this cumin powder into the chutney to introduce a warm and earthy undertone.
- Creamy Avocado: For a luxurious and creamy texture, blend in half a ripe avocado. This not only adds richness but also enhances the color of the chutney.
- Sesame Kick: Stir in a spoonful of toasted sesame seeds to the chutney before serving. The nutty flavor of sesame will complement the herbal freshness.
