Chocolate-Chocolate Chip Cookies

There are a few things that every woman who loves to cook should have up her sleeve: a go-to dinner for guests, an easy solo meal, a signature cocktail, and a take-anywhere dessert. MAKES: about 48 cookies

INGREDIENTS:

  • 1¼ cups all-purpose flour
  • ¾ cup unsweetened cocoa
  • ¾ teaspoon baking soda
  • 1¼ teaspoons salt
  • 2 sticks unsalted butter (1 cup), softened
  • 1 cup packed light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1½ teaspoons pure vanilla extract
  • One 12-ounce package semisweet or bittersweet chocolate chips (2 cups)
  • 1 cup coarsely chopped walnuts (optional)

 

INSTRUCTIONS:

  1. Preheat the oven to 375°F. Position the racks in the upper and lower thirds of the oven.
  2. In a medium bowl, whisk together the flour, cocoa, baking soda, and salt.
  3. In a large bowl, with a mixer on high speed, beat the butter and sugars until light and fluffy, about 4 minutes.
  4. Beat in the eggs, one at a time. Mix in the vanilla until combined. Add the flour mixture and combine thoroughly. Stir in the chocolate chips and walnuts (if using).
  5. Drop rounded tablespoons of the mixture onto ungreased baking sheets about 2 inches apart. Bake for about 8 minutes, until puffy and the bottoms are golden brown. Let cool on baking sheets about 2 minutes, then transfer them to wire racks to cool completely.
