MAKES: about 48 cookies
INGREDIENTS:
- 1¼ cups all-purpose flour
- ¾ cup unsweetened cocoa
- ¾ teaspoon baking soda
- 1¼ teaspoons salt
- 2 sticks unsalted butter (1 cup), softened
- 1 cup packed light brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 1½ teaspoons pure vanilla extract
- One 12-ounce package semisweet or bittersweet chocolate chips (2 cups)
- 1 cup coarsely chopped walnuts (optional)
INSTRUCTIONS:
- Preheat the oven to 375°F. Position the racks in the upper and lower thirds of the oven.
- In a medium bowl, whisk together the flour, cocoa, baking soda, and salt.
- In a large bowl, with a mixer on high speed, beat the butter and sugars until light and fluffy, about 4 minutes.
- Beat in the eggs, one at a time. Mix in the vanilla until combined. Add the flour mixture and combine thoroughly. Stir in the chocolate chips and walnuts (if using).
- Drop rounded tablespoons of the mixture onto ungreased baking sheets about 2 inches apart. Bake for about 8 minutes, until puffy and the bottoms are golden brown. Let cool on baking sheets about 2 minutes, then transfer them to wire racks to cool completely.
