INGREDIENTS:

  • ½ small (about 2kg) piece seedless watermelon, chilled
  • 100g Persian or marinated feta, drained
  • 1 tbs finely chopped mint leaves, plus 12 small mint leaves, to serve
  • 6 pitted Kalamata olives, finely chopped
  • Dukkah, to serve

 

INSTRUCTIONS:

  1. Trim the watermelon and cut the flesh into 12 x 3cm square cubes. To do this, slice the watermelon into manageable pieces, then cut these into squares.
  2. Using a melon baller or a small knife, carefully scoop out a small well from the center of each watermelon cube. Ensure that you don’t break the sides of the watermelon while doing this. This well will hold the feta mixture.
  3. In a small bowl, beat the feta until it becomes smooth and creamy.
  4. Stir in the finely chopped mint leaves and the finely chopped Kalamata olives into the feta mixture. This will infuse the feta with a burst of fresh flavor.
  5. Carefully spoon the feta mixture into each of the watermelon cubes, filling the wells you created earlier.
  6. Top each watermelon cube with a small mint leaf. This adds a touch of visual elegance and a hint of minty aroma.
  7. Arrange the watermelon and feta bites on a serving tray, ensuring they’re neatly placed for an appealing presentation.
