INGREDIENTS:
- 2 diced onions
- 3 tablespoons olive oil
- 8 minced garlic cloves
- 1 tablespoon taco seasoning
- 1½ tablespoons oregano
- 1 (.36-ounce) can of chipotle in adobo sauce
- 1 cup chicken broth
- 1 cup water
- 1 bay leaf
- 2 tablespoons white vinegar
- 3 pounds beef roast
INSTRUCTIONS:
- Take the diced onions, olive oil, minced garlic cloves, taco seasoning, oregano, chipotle in adobo sauce, chicken broth, water, bay leaf, and white vinegar and put them in a blender. Blend for 1–2 minutes until everything is well-grounded and combined.
- Add some of the sauce to the bottom of a slow cooker.
- Place the beef roast in the slow cooker pot and pour the rest of the sauce over the meat, ensuring it is well-coated.
