Vegetarian Worcestershire sauce is now available in health food stores, and may be added for an additional dimension if you wish, but this vegetarian version of America’s favorite salad is authentic in taste as-is.

INGREDIENTS:

Dressing:

  • 1 egg yolk
  • 1 tablespoon Dijon mustard
  • Juice of ½ lemon (about 2 tablespoons)
  • 2 cloves garlic, finely chopped
  • ¼ cup vegetable oil (preferably peanut oil)
  • ¼ cup grated Parmigiano-Reggiano cheese
  • Pinch of cayenne pepper (optional)
  • Salt and pepper

 

Salad:

  • 1 head romaine lettuce, washed, torn into bite-size pieces
  • 1 cup croutons
  • 1 small wedge Parmigiano-Reggiano cheese (optional)

 

INSTRUCTIONS:

  1. Make the dressing: In a mixing bowl or food processor, combine the egg yolk, mustard, lemon juice, and garlic. Vigorously whisk or process in the oil, starting just a drop at a time, and gradually drizzling it in a small stream until all is emulsified into a smooth mayonnaise. Stir in the cheese, cayenne, salt, and pepper, and a little extra lemon if desired.
  2. Toss the lettuce and croutons with the dressing, and divide onto 8 plates, arranging croutons on top. If desired, shave curls of Parmigiano over each salad, using a vegetable peeler. Dressing may be made up to 1 week in advance.

  • Fresh Ingredients: Use fresh and crisp romaine lettuce for the best results. Avoid wilted or browned leaves.
  • Croutons: You can use store-bought croutons, but homemade croutons are even better. Cube some day-old bread, toss with olive oil, and bake until golden brown and crisp.
  • Parmigiano-Reggiano: For an authentic Caesar Salad flavor, use high-quality Parmigiano-Reggiano cheese. Shave it into curls with a vegetable peeler for a nice presentation.
  • Dressing: Gradually drizzle in the oil when making the dressing to ensure it emulsifies properly. If you prefer a less tangy dressing, use less lemon juice.
  • Vegetarian Worcestershire Sauce: If you want to add an extra layer of flavor, look for vegetarian Worcestershire sauce in health food stores.
  • Anchovies (Optional): Traditional Caesar dressing includes anchovies. If you like, you can add a couple of mashed anchovy fillets to the dressing for that classic Caesar flavor.
  • Seasoning: Be mindful of the salt in the dressing. Both the cheese and the Worcestershire sauce (if used) can be salty, so taste as you go and adjust as needed.
  • Customize: Feel free to add grilled chicken, shrimp, or other protein sources to make it a more substantial meal.
  • Make Ahead: You can prepare the dressing up to a week in advance and store it in the refrigerator. Just toss it with the lettuce and croutons when you’re ready to serve.
  • Serve Chilled: Serve the salad chilled for a refreshing taste.
