MAKES: ABOUT ½ CUP

 

INGREDIENTS:

    • ½ cup extra-virgin olive oil
    • Zest from 2 medium lemons
    • 1 garlic clove, sliced
    • 2 teaspoons crushed hot red chile flakes
    • Pinch of kosher salt or coarse sea salt

 

INSTRUCTIONS:

    1. Combine Ingredients: In a small saucepan, combine the extra-virgin olive oil, lemon zest, sliced garlic clove, crushed hot red chile flakes, and a pinch of kosher salt or coarse sea salt.
    2. Warm Gently: Warm the mixture gently over low heat for about 10 minutes. This will infuse the flavors of the ingredients into the oil. Be careful not to overheat the oil, as it shouldn’t reach a high temperature.
    3. Remove from Heat: After warming, remove the saucepan from the heat and let the mixture stand at room temperature briefly. This allows the flavors to meld even further.
    4. Apply to Grilled Seafood: Spread or spoon the infused oil mixture onto grilled fish or shellfish shortly before they are ready to come off the grill. The flavorful oil will add a burst of flavor to the seafood.
