  • 1 tbsp sunflower, peanut, or mild-flavored olive oil
  • 2 tbsp (30g) butter
  • 1lb 2oz (500g) celeriac, peeled and chopped
  • 1 large head of celery, cored and chopped
  • 1 medium starchy potato, peeled and chopped
  • 3–4 tbsp water
  • Sea salt and freshly ground black pepper
  • 1 quart (1 liter) vegetable stock or chicken stock
  • 2 tbsp (30g) chilled butter, diced
  • 4 slices of walnut bread, lightly toasted, to serve

 

INSTRUCTIONS:

  1. Sauté the Vegetables: In a large sauté pan over medium heat, combine the sunflower oil (or peanut or mild-flavored olive oil) with the 2 tablespoons of butter. Add the peeled and chopped celeriac, celery, and the starchy potato. Stir well for 2–3 minutes to coat the vegetables with the aromatic mixture. Reduce the heat slightly and add 3–4 tablespoons of water to the pan. Season the vegetables lightly with sea salt and freshly ground black pepper. Partially cover the pan and let the vegetables stew gently until they become very soft. Stir them occasionally to ensure even cooking and maintain a low heat throughout this process.
  2. Puree the Vegetables: Once the vegetables are soft and tender, transfer them to a food processor and puree them until smooth. Return the pureed mixture to the pan, and pour in the vegetable stock (or chicken stock). Season the mixture again, and stir briskly to blend everything together. Bring the soup to a simmer over medium heat, stirring frequently. Allow it to simmer gently for 10–15 minutes, continuing to stir occasionally. Taste and adjust the seasoning as needed.
  3. Finish with Butter: Just before serving, whisk in the chilled diced butter to add a luxurious and velvety texture to the soup.
