MAKES: ABOUT 2 CUPS

INGREDIENTS:

  • 1 tablespoon rose petals
  • 1 tablespoon violets
  • 1 tablespoon chamomile flowers
  • 1 tablespoon lavender flowers
  • 2 cups mild-flavored honey, such as clover honey

 

INSTRUCTIONS:

  1. Combine the rose petals, violets, chamomile flowers, and lavender flowers in a pint-sized glass jar with a tight-fitting lid.
  2. Pour the 2 cups of mild-flavored honey, such as clover honey, over the flowers in the jar.
  3. Tighten the lid of the jar and set it in a sunny window for 2 weeks, turning the jar every few days as the flowers tend to float to the top of the honey.
  4. After 2 weeks, transfer the honey to your cupboard and use it in any recipe that calls for honey.
  5. You may leave the flowers in the honey or strain the honey to remove the petals if you prefer a smoother consistency.
