MAKES: ABOUT 2 CUPS
INGREDIENTS:
- 1 tablespoon rose petals
- 1 tablespoon violets
- 1 tablespoon chamomile flowers
- 1 tablespoon lavender flowers
- 2 cups mild-flavored honey, such as clover honey
INSTRUCTIONS:
- Combine the rose petals, violets, chamomile flowers, and lavender flowers in a pint-sized glass jar with a tight-fitting lid.
- Pour the 2 cups of mild-flavored honey, such as clover honey, over the flowers in the jar.
- Tighten the lid of the jar and set it in a sunny window for 2 weeks, turning the jar every few days as the flowers tend to float to the top of the honey.
- After 2 weeks, transfer the honey to your cupboard and use it in any recipe that calls for honey.
- You may leave the flowers in the honey or strain the honey to remove the petals if you prefer a smoother consistency.
