INGREDIENTS:
- 1 batch Steamed Seitan or 1 (14-oz [396-g]) bag store-bought vegan “chicken” strips (gluten-free and/or soy-free if needed)
- 12 slices Tofu “Bacon” or store-bought alternative (gluten-free and/or soy-free if needed)
- 1 tbsp (15 ml) olive oil
- 4 packed cups (300 g) chopped romaine lettuce
- ¼ cup (25 g) vegan Parmesan Cheese or store-bought (nut-free and/or soy-free if needed)
- ¾ cup (180 ml) vegan Creamy Caesar Dressing or store-bought (soy-free if needed)
- 6 medium-sized vegan flour tortillas (gluten-free if needed)
INSTRUCTIONS:
- Prepare the Filling: Begin by chopping the steamed seitan and “bacon” into small pieces.
- Sauté the Seitan and “Bacon”: In a large skillet, heat the olive oil over medium-low heat. Add the seitan and “bacon,” and cook, stirring often, for 3 to 5 minutes or until they become crispy. Remove the seitan and “bacon” from the pan and transfer them to a medium-sized bowl.
- Combine the Salad: To the bowl with seitan and “bacon,” add the chopped romaine lettuce, vegan Parmesan cheese, and Caesar dressing. Toss everything together until well combined.
- Assemble the Wraps: Lay out the medium-sized vegan flour tortillas. Evenly distribute the Caesar salad mixture into the centers of the tortillas.
- Wrap It Up: Carefully fold up the sides of each tortilla and secure the wraps with toothpicks to hold them together.
