Between the fish and dairy, traditional Caesar salads are far from vegan, which is why we created a cruelty-free version. It has all of the flavor with none of the animal ingredients. We love serving this salad with our Spicy Crispy Tofu Pita.

Caesar Salad was invented by Caesar Cardini, an Italian-American restaurateur, in his restaurant in Tijuana, Mexico. Legend has it that he created the salad on a busy Fourth of July weekend when his kitchen was running low on ingredients. Using what he had on hand, he tossed together romaine lettuce, garlic, croutons, Parmesan cheese, olive oil, and Worcestershire sauce. The salad was prepared tableside for added flair, and it quickly gained popularity. It eventually made its way to the United States and became a classic American salad.

A traditional Caesar Salad consists of crisp romaine lettuce leaves, croutons (often made from toasted bread), Parmesan cheese (or a vegan alternative for a dairy-free version), and a creamy dressing. The dressing typically includes ingredients like garlic, anchovies, olive oil, egg yolk, lemon juice, and Worcestershire sauce. Modern variations may omit the anchovies for a vegetarian or vegan version, and some use mayonnaise instead of egg yolk for a creamier texture.

Caesar Salad is known for its robust and savory flavors. The creamy dressing offers a rich and tangy taste, complemented by the umami notes from Parmesan cheese and Worcestershire sauce. YIELD: 6 to 8 servings

 

INGREDIENTS:

  • 12 packed cups (2 lb [907 g]) chopped romaine lettuce
  • 2 heaping cups (115 g) Homemade Croutons, Caesar Variation (1 batch) or store-bought (gluten-free if needed)
  • 1 cup (240 ml) Creamy Caesar Dressing (½ batch) or store-bought, plus more if desired (soy-free if needed)
  • ¾ cup (75 g) vegan Parmesan Cheese or store-bought, plus more for serving (nut-free and/or soy-free if needed)
  • Freshly ground black pepper, for serving

 

INSTRUCTIONS:

  1. In a large bowl, combine the chopped lettuce, croutons, Caesar dressing, and Parmesan. Toss well to coat all the ingredients evenly.
  2. If desired, add more dressing to the salad to achieve your preferred level of creaminess and flavor. Toss again to incorporate any additional dressing.
  3. Serve the Caesar Salad topped with more vegan Parmesan cheese for an extra layer of flavor. Finish with freshly ground black pepper for added seasoning.
