  • 2 (15-ounce) cans black beans, rinsed
  • 2 large eggs
  • 5 tablespoons extra-virgin olive oil
  • 1 teaspoon ground cumin
  • ¼ teaspoon salt
  • ⅛ teaspoon cayenne pepper
  • 1 cup panko bread crumbs
  • 1 red bell pepper, stemmed, seeded, and chopped fine
  • ¼ cup minced fresh cilantro
  • 1 shallot, minced

 

INSTRUCTIONS:

  1. Place 2½ cups of beans in a large bowl and mash with a potato masher until mostly smooth.
  2. In a separate bowl, whisk together eggs, 1 tablespoon of olive oil, ground cumin, salt, and cayenne pepper.
  3. Stir the egg mixture, the remaining beans, panko bread crumbs, chopped bell pepper, minced cilantro, and minced shallot into the mashed beans until just combined.
  4. Divide the mixture into 6 equal portions and lightly pack them into 1-inch-thick patties.
  5. Heat 2 tablespoons of olive oil in a 12-inch nonstick skillet over medium heat until shimmering.
  6. Carefully place 3 patties in the skillet and cook until well browned on both sides, about 4 to 5 minutes per side.
  7. Transfer the cooked burgers to a plate and tent loosely with aluminum foil to keep them warm.
  8. Repeat the cooking process with the remaining 2 tablespoons of olive oil and the remaining patties.
