Steel-cut oats are not only delicious; they also pack a wallop in nutritional value. They’re a good source of protein and have properties that help lower cholesterol-not bad for a lowly oat. The problem with steel-cut oats, also known as Irish oatmeal, is that they take forever to cook. So if you are hankering for a bowl of Irish oatmeal and you don’t have a lot of time, the pressure cooker will become your new best friend. In five minutes, the steel-cut oats emerge creamy and perfectly cooked, ready for a dollop of butter or some hot milk and maybe some coarse brown sugar. Then just dig in.

SERVES: 4

INGREDIENTS:

  • 1 cup steel-cut oats, such as McCann’s
  • 3 cups water
  • 1 teaspoon salt
  • 4 tablespoons unsalted butter, melted

 

INSTRUCTIONS:

  1. In the pressure cooker, combine the oats, water, and salt.
  2. Drizzle 2 tablespoons of the melted butter over the water.
  3. Lock the lid in place and cook at high pressure for 5 minutes.
  4. Quick release the pressure and remove the lid, tilting the pot away from you to avoid the escaping steam.
  5. Stir the oatmeal.
  6. Serve in individual bowls, drizzled with the remaining butter.
