In five minutes, the steel-cut oats emerge creamy and perfectly cooked, ready for a dollop of butter or some hot milk and maybe some coarse brown sugar. Then just dig in.

INGREDIENTS:
- 1 cup steel-cut oats, such as McCann’s
- 3 cups water
- 1 teaspoon salt
- 4 tablespoons unsalted butter, melted
INSTRUCTIONS:
- In the pressure cooker, combine the oats, water, and salt.
- Drizzle 2 tablespoons of the melted butter over the water.
- Lock the lid in place and cook at high pressure for 5 minutes.
- Quick release the pressure and remove the lid, tilting the pot away from you to avoid the escaping steam.
- Stir the oatmeal.
- Serve in individual bowls, drizzled with the remaining butter.
