INGREDIENTS:

  • 2 1/2 cups ripe soft fruit, washed, stemmed, peeled, pitted, and chopped as necessary
  • 1 cup superfine sugar or Sugar Syrup, or to taste
  • 1 tablespoon freshly squeezed lemon juice, or to taste

 

INSTRUCTIONS:

  1. Purée the fruit in a blender along with most of the sugar or sugar syrup and the lemon juice.
  2. Taste the mixture and add more sugar or lemon juice if necessary. It’s recommended to slightly oversweeten the sorbet since the sweetness will be less noticeable when frozen.
  3. If you’re using fruits like mangoes or seedy berries, strain the purée by pressing it through a sieve with a rubber spatula. This step will help remove any fibers or seeds. Make sure to scrape all the purée from the underside of the strainer.
  4. Refrigerate the mixture until it cools down.
  5. Churn the mixture in an ice cream maker following the manufacturer’s instructions.
  6. Once churned, transfer the sorbet to a container and freeze until firm.

  • Incorporate 1 teaspoon of rose or orange blossom water to infuse the sorbet with a delicate floral note.
