BAKED APPLES WITH RAISINS AND ALMONDS

INGREDIENTS:

  • 1 1/2 lbs. (700 g) apples, such as Reinette or Golden Delicious
  • 3 oz. (80 g) apricot preserves, or about 1/4 cup
  • 1 1/2 oz. (40 g) raisins, or about 1/4 cup packed
  • 1 1/2 oz. (40 g) slivered almonds, or about 1/3 cup
  • 2 tbsp. (25 g) brown sugar

 

INSTRUCTIONS:

  1. Preheat the oven to 325°F (160°C).
  2. Using the tip of a knife, make a circular incision around each apple so it doesn’t burst in the oven. Remove the core with an apple corer.
  3. In a bowl, stir together the raisins and preserves and fill each apple with the mixture. Sprinkle the brown sugar on top.
  4. Arrange the apples in a baking dish, sprinkle the almonds over the tops, and bake for about 15 minutes.
