  • 4 tart apples, peeled and cored
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon minced or grated lemon zest, or more to taste
  • 1 teaspoon ground cinnamon, or more to taste
  • 1/2 cup sugar, or more to taste, plus more for the work surface and sprinkling
  • 1/2 recipe Puff Pastry

 

INSTRUCTIONS:

  1. Grate the apples in a food processor or on the coarse side of a box grater. Immediately toss them with lemon juice to prevent browning.
  2. Add cornstarch, lemon zest, cinnamon, and sugar to the grated apples. Adjust the amount of lemon zest, cinnamon, and sugar according to your taste preferences. Mix well to combine.
  3. Use sugar to coat a work surface. Cut the puff pastry in half and roll it out on the sugared surface, sprinkling sugar on the dough as you work, until it is less than 1/4 inch thick.
  4. Cut the rolled out pastry into 4-inch squares. There will be leftover scraps and ragged ends that you can use to make cookies. Lightly sprinkle the squares with sugar.
  5. Place 2 tablespoons of the apple filling in the center of each square. Lightly brush the edges of the pastry with water, then fold over the corners to form a triangle. Gently seal the turnovers with your fingers.
  6. Using a razor blade or a sharp paring knife, slash the top of each turnover once or twice to allow steam to escape during baking.
  7. Place the turnovers on ungreased baking sheets, about an inch apart, and chill them while you preheat the oven or for up to several hours.
  8. Preheat the oven to 350°F. Lightly brush the tops of the turnovers with water and sprinkle them with sugar.
