MAKES: ABOUT 1 CUP

 

INGREDIENTS:

  • 1 small fennel bulb (about 5 ounces), trimmed and thinly sliced through the stem end
  • 1 medium lemon, thinly sliced
  • ⅓ cup extra-virgin olive oil
  • 2 to 4 garlic cloves, chopped
  • 1 teaspoon kosher salt or coarse sea salt

 

INSTRUCTIONS:

  1. For Whole Fish Preparation:
    • Gently combine all of the ingredients in a bowl.
    • Tuck the paste-coated fennel and lemon slices into the cleaned cavity of the fish.
    • Spread the rest of the paste over the exterior of the fish.
    • Let the fish sit for up to 30 minutes at room temperature before cooking.
  2. For Fish Fillets or Shellfish Preparation:
    • Combine all of the ingredients in a food processor and puree into a thick paste.
    • Rub the paste on fish fillets or on whole shrimp or scallops.
    • Let the seafood sit for up to 30 minutes at room temperature before cooking.
