Meanwhile, julienned green peppers, red peppers, and yellow onions are sautéed until they reach a tender-crisp texture. To assemble the sizzling chicken and cheese, a cast iron skillet is heated until very hot. Cooked mashed potatoes are placed in the skillet, and a combination of shredded Chihuahua white cheese and American cheese is added to create a creamy and cheesy base. INGREDIENTS:

  • 2 (4-ounce) chicken breasts
  • 2 tablespoons chopped garlic
  • 2 tablespoons chopped parsley
  • 1 teaspoon crushed red chilies
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 4 tablespoons divided olive oil
  • 1 julienned green pepper
  • 1 julienned red pepper
  • 1 julienned yellow onion
  • 4 cups cooked mashed potatoes
  • 1/2 cup shredded Chihuahua white cheese
  • 2 slices American cheese

 

INSTRUCTIONS:

  1. Pound the chicken breasts to an even thickness.
  2. In a zip-top bag, combine the chopped garlic, parsley, crushed red chilies, black pepper, salt, and 2 tablespoons of olive oil.
  3. Place the chicken breasts in the marinade and refrigerate for 2-4 hours.
  4. In a cast iron skillet over medium heat, heat the remaining 2 tablespoons of olive oil. Sauté the marinated chicken breasts for about 5 minutes per side, or until they reach a golden brown color. Remove the chicken from the skillet and set aside.
  5. In the same skillet, sauté the julienned green pepper, red pepper, and yellow onion for 2-3 minutes, or until they are cooked but still al dente. Remove the peppers and onion from the skillet and set aside.
  6. Heat another cast iron skillet on the burner until very hot. Place the cooked mashed potatoes in the skillet, then add the shredded Chihuahua white cheese, slices of American cheese, sautéed peppers, and onion.
  7. Place the sautéed chicken breasts on top of the potatoes and cheese mixture. Cook until everything is heated through and the cheese is melted.
  8. Serve the dish directly from the hot skillet, ensuring to handle it with oven mitts or a trivet to protect your hands and surfaces.
