INGREDIENTS

For the Almond Fingers:

  • 1 teaspoon of almond extract

INSTRUCTIONS

  1. In a mixing bowl, cream together the softened butter and granulated sugar until the mixture becomes light and fluffy.
  2. Beat in the egg and almond extract, continuing to mix until well combined.
  3. Gradually add the finely ground almonds and all-purpose flour to the mixture. Add a pinch of salt. Mix until a cohesive dough forms.
  4. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for about 30 minutes to firm it up.
  5. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Take portions of the chilled dough and roll them into finger-shaped logs, approximately 3-4 inches long and 1/2 inch wide. Place them on the prepared baking sheet, leaving some space between each.
  7. If desired, gently press sliced almonds onto the top of each almond finger for added texture and decoration.
  8. Place the baking sheet in the preheated oven and bake for about 12-15 minutes, or until the almond fingers turn golden brown at the edges.
  9. Remove the almond fingers from the oven and allow them to cool on a wire rack. As they cool, they will firm up.
  10. Once completely cooled, you can dust the almond fingers with powdered sugar for an extra touch of sweetness.
  11. Serve your homemade almond fingers with a cup of tea or coffee and enjoy their delightful nutty flavor and delicate texture.
