INGREDIENTS

  • 1 pound lean pork
  • 6 tablespoons flour
  • 1 tablespoon canola oil
  • 1 small onion, diced
  • 1 can (4 oz.) green chilies, chopped

  • 4 cups water
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

 

INSTRUCTIONS

  1. Cut and Coat Pork:
    • Begin by cutting the 1-pound of lean pork into bite-sized pieces.
    • Lightly coat the pork pieces with 6 tablespoons of flour.
  2. Brown the Pork:
    • In a large pot or Dutch oven, heat 1 tablespoon of canola oil over medium heat.
    • Add the flour-coated pork pieces to the hot oil and brown them. This will add depth of flavor to the dish.
  3. Add Onions:
    • Once the pork is browned, add the diced small onion to the pot and continue to cook until the onions are also browned.
  4. Incorporate Chilies, Tomatoes, and Seasonings:
    • Stir in the can of chopped green chilies and the can of cut-up tomatoes.
    • Add 4 cups of water to the pot, along with 1 teaspoon of garlic powder.
    • Season the mixture with salt and pepper to taste.
  5. Simmer:
    • Reduce the heat to low and allow the Green Chili to simmer for 1 hour. This simmering time allows the flavors to meld together and the pork to become tender.
  6. Cool and Freeze:
    • Once the Green Chili has finished simmering, allow it to cool to room temperature.
    • Transfer the cooled Green Chili into a gallon-sized freezer bag.
    • Label the bag with the date and heating instructions (see Beef and Bean Burritos) for future reference.
    • Freeze the Green Chili along with the pan of burritos for convenient meal planning.
  7. Store Unused Portion:
    • If you have any unused portion of Green Chili, store it in the refrigerator to enjoy within a few days.
