INGREDIENTS:
- 2 cups (250 g) all-purpose flour
- 3/4 cup plus 2 tbsp. (175 g) sugar
- 4 1/2 oz. (125 g) almonds
- 1/2 tsp. (2 g) baking soda
- 2 (95 g) large eggs
- 2 (30 g) large egg yolks
- 1 pinch (1 g) salt
- Pure vanilla extract, to taste
INSTRUCTIONS:
- Heat the oven to 350°F (180°C) and line a baking sheet with parchment.
- Mix all the ingredients together and knead them together until the dough is smooth and homogeneous.
- Form the dough into logs and arrange them on the baking sheet.
- Bake for about 20 minutes.
- While the logs are still hot, cut them into diagonal slices.
- Return them to the oven and bake until golden on both sides.
