INGREDIENTS:

  • 1 large head cauliflower
  • 2 pounds potatoes
  • 3 tablespoons oil
  • 2 large onions, finely chopped (about 5 cups)
  • 4 jalapeño or other chili peppers, finely chopped
  • 1 (1-inch) piece fresh ginger, finely chopped
  • 3 tomatoes, finely chopped
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon turmeric
  • 1 teaspoon ground coriander
  • 2 teaspoons kosher salt
  • 1 teaspoon garam masala (a spice mixture available at specialty stores—or you can make your own by combining 1 teaspoon each of ground cardamom, cumin seed, cloves, black pepper, and cinnamon)
  • Chopped cilantro or parsley, for garnish

 

INSTRIUCTIONS:

  1. Prepare the Vegetables: Begin by cutting the cauliflower into large chunks and peeling and dicing the potatoes. Set them aside for later use.
  2. Sauté the Aromatics: Heat the oil in a heavy skillet or a large, deep pan over medium-high heat. Once the oil is hot, add the finely chopped onions, chili peppers, and ginger. Sauté them until they turn a beautiful golden brown, which should take around 10 minutes.
  3. Add the Tomatoes and Spices: Stir in the finely chopped tomatoes, chili powder, turmeric, ground coriander, and kosher salt. Cook this aromatic mixture for an additional 5 minutes, allowing the spices to become fragrant and meld with the other ingredients.
  4. Incorporate the Vegetables: Now, it’s time to add the potatoes and cauliflower to the pan. Pour in enough water to reach halfway up the vegetables. This will create a flavorful cooking liquid for the curry.
  5. Cover and Simmer: Cover the pan and allow the curry to simmer for approximately 20 minutes. Stir occasionally to ensure that the potatoes and cauliflower cook evenly and become very tender.
  6. Enhance with Garam Masala: After the vegetables are tender and cooked through, sprinkle in the garam masala powder. This addition brings a final layer of complexity and warmth to the dish. Cook for an additional 5 minutes to allow the flavors to meld.
  7. Garnish and Serve: Serve your Aloo Gobi hot, garnished with chopped cilantro or parsley. This garnish adds a fresh and vibrant touch to the curry.
